Cutting vegetables can be the most time consuming part of healthy eating. This is a quick way to cut beets in less than 5 minutes.

STEP 1
Cut off the greens and the “tap root”. If you grew the greens without any pesticides, herbicides, or fungicides they are delicious in smoothies, salads, or wilted in stovetop hotdishes. If there is a chance the beets were grown with harsh chemicals, add them to your trusty compost bin.
STEP 2
Slice the beet “hamburger style” if it is large. Remove the peel and quarter.
STEP 3
Use lemon juice to remove the coloring from your hands, if desired.
NOTE ON BEETS: They will stain your clothing and your skin, temporarily. Beet juice can be used as a natural dye (for hair or clothing), if you’re into that kind of thing. The coloring, while generally harmless, will also color your urine and feces. It may come as a shock the first time, but it’s a good warning nonetheless.
BENEFITS OF BEETS: The most important benefit of beets is the fiber – so they will fill you up quickly. Beets are a low starch-content root veggie, so you won’t feel the “carb coma” after eating them. These are a great treat for diabetics because they have a sweet flavor but only 1/3 the carbs as potato wedges. Finally, they add color to your diet keeping your healthy lifestyle fun.
